You can keep your phone at your side while you walk; when you're near a Pokemon, you'll get a notification in the form of a vibration and (if your sound is turned on) the Pokemon's unique call.

This takes some trial and error, to be sure, and it's not the most elegant manner Niantic could have let's catch Pokemon, but hey --- it adds some fun and puzzle to the finding encounter. At least we do not have to risk real world ticks to walk around aimlessly in the tall grass until we strike a Pokemon.
